Mango Soup
Introduction
Mango is called the king of mangoes. Mango soup is commonly made in South Asia. Mango soup is very common in sweet flavor. But today we are going to make mango soup with a spicy flavor. INGREDIENTS
- 2 ripe mangoes
- 120ml/½ cup natural (plain) yogurt
- 15ml/1 tbsp gram flour
- 2.5ml/½ tsp grated fresh root ginger
- 900ml/4 cups cold water
- 2 red chillies, seeded and finely chopped
- 2.5ml/½ tsp cumin seeds
- 30ml/2 tbsp olive oil
- 2.5ml/½ tsp mustard seeds
- 8 curry leaves
- salt and ground black pepper fresh mint leaves, shredded, to garnish natural yogurt, to serve
Procedure
1 Firstly, prepare the mangoes by peeling them and also removing the stones then chopping the flesh. Blend in a food processor or a blender till they reach a fine paste like consistency.
2 Add this mixture into a pan and mix the gram flour, yogurt, water, ginger and chillies stir well. Stir and bring to a boil. Stir over medium-low heat for about 4-5 minutes or until thicken slightly, then remove the pan from heat.
3 Pour the oil into a frying pan and heat it. Now put the mustard seeds in the oil to give a splattering sound for a few seconds and then put the cumin seeds.
4 Then add the curry leaves and fry the mixture for about 5 minutes. Add the spice mixture into the soup, put it again on the heat and simmer for 10 minutes.
5 It is optional to press it through a mouli-legume or a sieve (strainer) then add season to the food. Finally, let the soup stand until it is cool and refrigerate for 1 hour at the very least.
6 Serve the soup in bowls and garnish each with a dollop of yogurt. I top it up with lettuce and other choice leaves before serving the cocktail.
