Garlic and Almond Soup
Garlic and Almond Soup-This is a cold variety of Garlic and Almond soup. This soup is a recipe of the traditional cuisine of Andalusia. It has been a delicacy since ancient times in Rome. This will keep the body cool and there is a feeling of freshness. This is a homemade soup which prepares mostly people in Southern Spain. It is composed of almonds and pine nuts; these are the principal ingredients in their place.
SERVES & INGREDIENTS
– 75g/ 3/4 cup blanched almonds
– 6 large garlic cloves, peeled
– 50g/1/2 pine nuts
– 200g/ good-quality day-old bread
– Crusts removed
– 1 litre/ cups chilled still mineral water
– 120ml/ ½ cup extra virgin olive oil, plus extra to serve
– 30-45ml/2-3 tbsp dry sherry
– 15ml/1 tbsp sherry vinegar
– 250g seedless white grapes, peeled and halved
– Fresh chives, to garnish
– Flake sea salt
– Pinch of ground white pepper
– Ice cubes
Procedure
Step 1.
To begin with, roast the almonds and pine nuts in a pan over medium flame. Fry until light in color. Take out the roasted ingredients and cool them down. Grind to a fine powder.
Step 2.
Blanch garlic in boiling water for 3 minutes. Drain and wash.
Step 3.
Next, leave the bread in 300ml of water (or one cup) for ten minutes to soak and then squeeze dry. Peel, deseed and chop the garlic cloves finely. Combine the bread, nuts and 1 teaspoon salt in a food processor or blender.
Step 4.
Blend until a paste forms. Drizzle in the olive oil and sherry vinegar, then enough water to make a creamy thick pureed soup.
Step 5.
Add 2 tablespoons sherry. Season well and add additional dry sherry to taste. Refrigerate soup at least 3 hours. Correct the seasoning and thin with more cold water if it has become too thick. Set aside a few grapes for garnish; add the rest to soup.
Step 6.
Pour into glass bowls and add a knob of ice. Sprinkle the remaining grapes and chives over top. Serve straight away with a drizzle of extra virgin olive oil.
